After having success smoking a turkey and a pork shoulder, I decided to try smoking a pork loin. Using the same technique I used on the rotisserie, I wanted to wrap the loin in a bacon weave. I wove the bacon and slathered Chipotle BBQ sauce on it and wrapped it up in a roll for storage and marinating overnight.

Now, if you’ve ever wrapped anything in bacon for cooking, you’ve probably used toothpicks to hold the ends of the bacon and pin it to the meat. If you’ve used toothpicks, then you’ve probably noticed how the ends that are poking out of the meat get singed during the cooking process leaving you wondering how many toothpicks you actually used. This, invariably, leads to someone getting that lucky piece of meat with the missing toothpick. Biting into that toothpick is like biting into a piece of bone. It’s not fun.

This got me to thinking that there had to be something I could use that wouldn’t burn and get lost in the food. A few years ago, I found stainless steel metal food ties at Cook’s Warehouse that I could reuse instead of twine when grilling some chicken or pork on the rotisserie. I set out to Cook’s Warehouse to check out their grilling section. To my dismay, all they carried was wooden skewers, which is just a fancy way to sell ‘large toothpicks’. I knew they weren’t going to work.

A sales clerk standing close to me noticed the frustrated look on my face and asked if I needed any help. I explained what I was looking for and she told me that the wood skewers were all they had for what I was describing. Feeling a little defeated, we were walking out and passed the bar section. Out of the corner of my eye, I saw them. There they were… stainless steel cocktail picks used for Martini’s. They were about 4 inches long each and came in a box of 6. They even have a little tab at the end that could be used for gripping.

Next time you’re out and about at a cooking store, check the bar area and see if they carry these stainless steel cocktail picks. They work wonderfully. They are easy to use; easy to clean; and easy to store.
